Finca Deborah’s Aril is a meticulously processed Geisha coffee that exemplifies the farm’s commitment to innovation and excellence. This coffee undergoes an extended natural carbonic maceration process, followed by a washed finish, creating a cup that is fragrant, intense, and refined.

Processing Method:

Aril’s unique processing combines the best of both natural and washed techniques, involving:

  1. Selective Harvesting – Only perfectly ripe Geisha cherries are hand-selected at peak maturity to ensure maximum sweetness and complexity.
  2. Extended Carbonic Maceration (CM) Fermentation – Whole cherries are placed in sealed stainless steel tanks infused with carbon dioxide (CO₂). This anaerobic fermentation extends over an extended period, enhancing aromatic intensity and depth of flavor.
  3. Washed Finish – After fermentation, the cherries are depulped and fully washed, creating a cleaner and more structured profile while retaining the vibrant fruit characteristics of the CM process.
  4. Slow Drying – The beans are carefully dried on shaded African raised beds, ensuring stability and longevity in the cup.
